Grilled Napa Cabbage with Peanut Sauce

My share also included the most amazing snap peas, lettuce, zucchinis, russian kale, swiss chard, and purple basil. The greens don't last long around here as a veggie lover. I used the kale and chard to make green smoothies and kale chips. The snap peas were sweet, crunchy, and so incredibly fresh. I used the head lettuce to make beautiful salads with avocados, cucumbers, and olives with fresh lemon dressing. I added the zucchinis to my Warm Detox Soup and also made zucchini noodles with pesto sauce. I just picked up a whole bunch of farm fresh veggies and excited to try some new recipes. Grilled Napa Cabbage with Peanut Dressing

This has been my favorite recipe this summer.

Ingredients

1 Napa Cabbage

Olive oil for grilling Lime wedge

Salt and pepper

Preheat Grill or Grill Pan on high. Brush cabbage wedges with olive or avocado oil. Grill cabbage about 3 minutes per side. Transfer to a platter and sprinkle with lime juice, salt, and pepper.

Peanut Dressing

¼ cup peanut butter ¼ cup water 1 minced garlic clove 1 tsp fresh grated ginger 1 tsp crushed red pepper

Make Dressing

Combine dressing ingredients in a food processor or blender. Consistency should be thin enough to pour, add a little extra water if necessary. Drizzle dressing over cabbage and serve. Can be served warm or chilled.
