Grilled Veggie Flatbread

What to do with all these garden veggies? My new favorite summer recipe is a gluten-free veggie flatbread. Quick & easy on the grill.
I use a gluten free dough. If you have a recipe make your own. If you don't have a gluten sensitivity use regular dough. You can buy dough from your local pizza place or grocery.
Ingredients
Dough
Olive oil
Chopped garlic
Diced tomato
Fresh basil, oregano, thyme
Salt and ground pepper
Chopped garden veggies (zucchini, eggplant, broccoli, peppers)
Choice of cheese (vegan, goat, fresh mozzarella cheese)
Directions
Chop tomatoes, garlic, veggies, salt, and pepper and toss in a bowl with a tablespoon of olive oil. In a separate bowl have washed fresh herbs ready. Add all of this to a grill tray, plus your choice of cheese. Now get to grilling!
Brush dough with olive oil. Grill for about 2-3 minutes. Brush uncooked side, add chopped veggies and cheese, cover and grill for 8-10 minutes, not directly over coals.
Transfer to a cutting board and sprinkle basil, oregano, and thyme.
Slice and serve. Repeat recipe to make more. Also freeze and re-heat in the toaster oven for a quick snack.
