Sweet Dumpling Squash Recipe
Ingredients:
1-2 Sweet Dumpling Squash
2 tablespoons of organic brown sugar
1 cup brown rice
1 red bell pepper
Fresh kale
Fresh ginger
Olive oil
Salt and pepper to taste
Cinnamon to taste
Directions:
Heat oven to 400 degrees. Remove and discard pulp and seeds.
Coat inside of each squash with 1 tablespoon brown sugar; sprinkle with fresh grated ginger. Bake on a parchment-lined baking pan for about 30 minutes.
Cook brown rice or a rice of choice in rice cooker. Chop red bell pepper and kale. Mix cooked rice, kale, and pepper in a bowl.
Fill each squash with rice mix. Bake about 15 to 20 minutes. Sprinkle with cinnamon and serve warm.
